ABOUT FRESH CITY Fresh City, founded in 2011 by Ran Goel, is a city farm and retailer of farm-fresh, organic produce and prepared food. Each day we make locally and organically sourced meal kits and chef-inspired meals, salads, snacks and breakfasts from scratch. In late 2018 we acquired Mabel’s Bakery, a popular bakery in Toronto, producing artisan breads and pastries. Shortly after, in early 2019, we acquired The Healthy Butcher, a pioneer in organic and 100% grass-fed beef. We farm in Downsview Park as well as at Baka on Highway 427, and we have eight retail locations between our three brands. Fresh City delivers straight to our customers’ doors or to pick-up locations throughout the Greater Toronto Area. By bringing makers and eaters together, we are changing how people think about food.
As an Overnight Assistant, Bread, Breakfast Pastries and Sandwiches you are responsible for ensuring that the quality and consistency of Bread and Pastry products within the Mabel's brand is maintained while working with the rest of the Overnight Team, helping to ensure that production targets are met.
WHAT YOU’LL BE DOING:
Bread and Breakfast Pastries
o Following existing recipes and processes to make doughs, portion buns and breads and assemble sandwiches, wraps and panini
o Proof and bake off breakfast pastries, buns and yeasted breads, ensuring proper rise, bake and colouration
o Wrapping and labelling of all products to ensure neatness, product safety and accurate dating
o Preparing mis en place for the Overnight Bread and Pastry team
o Sorting of all products for morning deliveries
o Labelling and storing goods raw goods and doughs correctly, ensuring proper date rotation
o Assistance with ingredient, packaging and label inventories
Other duties as required including but not limited to;
o Assisting with other pastry duties including applying finishes to danish, pulling product for proofing
o Handling machinery including but not limited to ovens, proofing equipment, dough rounders and dough dividers
o Following all food handling protocols as set by the kitchen and the board of health.
o Cleaning and sanitizing all work surfaces
o Cleaning and maintaining all shared equipment
WHAT YOU’RE BRINGING TO THE TABLE:
● Able to work regular overnight shifts
● Works well in a team setting (agreeable, courteous and positive).
● Reliable (always shows up on time)
● Organized and able to work quickly
● Pay close attention to detail and are able to work neatly
● Can work independently, but not afraid to ask for help.
● One year of commercial kitchen experience
● Interest/knowledge in organics/farming/local food an asset
● You LOVE food and have a PASSION for Pastry
